because sometimes you just have to dig deep . . .

I love wine.

I have always loved wine. I was fortunate that my introduction to such a fickle sauce, was one of love and care . . . As my first foray into the hospitality business, I worked in a wine bar with a people who knew and loved wine. And after 20 + years being a purveyor of food beverages, I appreciated the divineness that is an after work cocktail, be it a robust scotch, dry martini or wine.

Because did I mention? I love wine.

Over the years, I have collected a small stash of various vintages that I have kept nestled to collect dust indefinitely. However, after the birth of my daughter, my husband and I had discovered that there were some genuinely gorgeous gems in there that were teetering on the edge of becoming very expensive vinegar from the early 2000’s and before.
So in hopes to dash off impending doom and satisfy curiosity, with my love of relaxing with a glass of vino, we decided to invade the dusty bottoms of the wine rack in the corner.

We sprung the trap in Schrödinger’s Shiraz, you might say.

And there births Raiders of the Wine Rack.

I am in no way and expert in wine. And this is not meant to be a tutorial. This is just us, drinking wine, taking pictures for Instagram and giving our two cents . . . which we most definitely could get change for.

Disclaimer: Once the cupboards are bare (and probably before that) I will be taking trips to the LCBO to investigate other pearls to partake in.

This beauty was a rough starter. I almost didn’t think she made it to 2019, but she did. Just needed a rest and a deep breath of fresh air for about 30 minutes before her colours really showed.
Black cherry and tobacco are stretched through her lengthy legs and deep colour.
Worth the 12 year wait.

Chateau Ste. Michelle Cabernet Sauvignon is by far my favourite wine. It has been my go to for years and if you have frequented my kitchen island whist I cook, this wine is what we would be sharing.

It usually comes out in force for July, but recently it has been released to Vintages at the LCBO quite a few times a year. This release was in December.

It’s dry. My favourite kind of dry. Extra.

Oaky. Tannic. Balanced.

It’s big but not overwhelming. Fruity but not sweet. It is a very typical Washington State Cab but still feels special.

This is readily found right now.

Save me some.

Not bad, thought it would be better. Hits of blackberry pie and vanilla with a cedar wood/oaky slide in. More on the medium body side, less tannins. You can still find this if you are looking for an easy going cab that doesn’t want to steal the show.

It was love at first sip, even though it was pungent even for me, upon inauguration. Initial whiff was heady like a thick fog of spice and fruit that mellowed out after 15 or so minutes.

We enjoyed this for our Valentine’s Day after dinner, as to savour it separately.

Earthy tones with a velvet finish. I would most definitely seek this out again.
